In 2009 and 2010 it worked and was enough, but I'd demand 1 GB in 2011 and 2012.
With N900, one sometimes notices more memory would be needed.
For example Mappero seems to be quite a memory hog (lots of tiles for smooth scrolling?) Also web-pages are not getting any lighter.
More doesn't hurt, but really most of the Android phones are running on 256mb ram because of 2.1 with no problem and Android is ram eater. This coming from Galaxy S owner.

Wanting more than 512mb ram is in very bottom of my list.
