My favourite app is called IWishICould
While it is not available in any repository, I use it very often. I will elaborate the features of the apps with some real world examples, where I have used it
Travelling on the train or the tube in London, the internet connection is quite dodgy and I quite like to read multiple news sites. So I wish I could load multiple webpages in the background, so that I can read them even after I lose my connection.
I was out in Spain and wanted to call home. But I didn't want to pay the ripoff roaming charges. So I wish I could call using skype (it is too expensive for some countries) or use one of the many sip operators, most of whom tend to specialise and hence have really good deals for most countries
Using a public wifi, I wish I could secure it in some way. Then I remembered that I could simply create an ssh tunnel to my home router

These are just some of the scenarios. Basically, you have some scenarios with all phones where you wished you could do something but were hampered by the capability of the phone. With N900, I have always managed to find workarounds to my IWishICoulds
