Here's a very neat trick for the Tab. Change the DPI for smaller text and an overall smaller UI.

EDIT: It should be worth mentioning that the Dell Streak has more on-screen despite the smaller screen size thanks to a lower DPI setting. If your eyesight is pretty good and/or you use glasses for near-sighted reading, this may be a good option.
I for one will certainly set the DPI as more on-screen is a desirable tradeoff. Having the UI text/icons at around the same size as a smartphone seems sensible, and a way to see more on-screen at once.
You have to love a resolution independent UI, eh?
