Applying category icons from one theme the to another is planned and will be implemented at some point.

Changin menu font unfortunately isn't doable, Nokia has hard coded that to be (white) Nokia Sans.

Edit: here's what's reading in the source of hildon-desktop (comment is by Nokia):

I just can't find the logic behind that.. why it would have been SO difficult to add one more font into gtkrc...
