I'm pretty sure the default is actually the other way round: Samsung's own keyboard is the default but you can switch to Swype as you describe or by press & hold on any input field and select 'input method'.

Thanks for the bit about the arrow keys: I thought I had read the documentation but must have skipped the bit about the editing keyboard.
