I don't think that you quite understand how hard it really is.

Regardless of how easy it is, developers have absolutely no incentive to create it. The N900 will never replace a dedicated camera that has been released in the last few years. Hell, my 4 year old camcorder craps all over the N900 in terms of recording quality.
