Then use the phone as it is intended. It was never intended to be a replacement for a video camera and never will be. If you would like a mobile phone with the capability of replacing a dedicated camera, the Nokia N8 is apparently the best alternative.
That would obviously sacrifice many advantages that the N900 has but that would be the best option. The N900 will never have a camera that will satisfy anyone except people that really do not care about the recording quality.
If you plan on recording videos on a regular basis and don't care about the capabilities of the N900, buy a more capable device.
