Well if you have a custom built ffmpeg, you may only need to recompile vlc. It may not be linked to your ffmpeg properly. Knots is no reason to ditch Slackware.

If you want to debug what's wrong, you could google some vlc http transcoding command line examples and run them with the -vvv switch.
