Have you used any of the various "speedup" scripts that are floating around? My experience has been that some of the tweaks they do help interactive tasks seem more responsive while making things like bulk writes via USB much slower. This shows especially when you're doing things like copying a bunch of mp3's or a movie to the device from a PC.
