I placed an icon in /usr/share/icons/hicolor/64x64/apps/squeezecontrol.png.

The trick is that you need to reboot the phone or kill hildon-desktop to get it to pick up the new icon. Bug 6931 asserts that you can also touch /usr/share/icons/hicolor, but that didn't work for me.
