I just updated to the newest OS and now when going to the youtube site I get a message stating that I do not have the latest version of flash. Now I can't get play any videos off youtube. Anyone else having this problem?

No I am not. N800 with latest OS2008 final and youtube is working better than ever.

Did you restored from a backup after flash ?

No I didn't. I just had it for a couple days and hadn't put anything on there other than UKMP so I didn't make a back up. Now that I think about it the web browser seems much more sluggish than before in general. It shows that I am running OS2008 version 2.2007 50-2. Is this what I am supposed to be on here? Sorry kind of newb with Nokia tablets.

Yes that's what's supposed to be on there.
No need to be sorry. You have a problem and this is the right forum to ask for solutions

Anyway.. try shutting it down and on again. If it doesn't work.. well.. probably you might flash it again...

In the beta OS2008, Flash would get disabled (without telling you..) when memory got too pegged I believe, if you get a message about missing Flash in the future, check under Tools -> Components and make sure the "Shockwave Flash" option is ticked.

It still does happen in final. It's actually part of Nokia's specifications to do so without telling you for some reason. (And also happens in all previous versions as well.)

That one is already in the FAQ:
Flash doesn't work / is out of date

Yeah I poked around in tools after reflashing and found the shockwave check box.
