What source code do you want?
You cant add or install source code. It is text files used to make the applications themselves and is generally (but not always) not put on the device itself, as the creation of the applications is done elsewhere. If you do want to put it on your n800, you can put it anywhere you want - it is just text.

Italodance, if you want to install apps on your tablet try going to maemo.org/downloads on the tablet's browser. There are categories of apps on the right of the screen, and most of them can be installed just by clicking on the green arrows next to them.

You really don't need access to source code unless you're a programmer.

source code is plain text and describe what an app do. it is written in a programming language, I suppose the main languages used with Maemo are C, python, C++ ... and then loads ...
depending on the language used, there are different means to get an app from source code : C and derivatives use a compiler that is called once and produce an executable file that is then put on your tablet via a deb file ; python is an interpreted language that uses an interpreter each time it is launched on the tablet ...
this is a quick and simplistic explanation and you can find way more in depth and precise informations on the net.
