You should be able to find Canola at the maemo.org/downloads site on your N800's web browser, just click on the install arrow to start the installation process.

However, there's a technical problem right now which is that the latest version of the tablet operating system may make it difficult to install apps with the method in the tutorial.

Basically Nokia messed up the launch of the latest version, they launched it before the authors of the apps were ready, and now everyone is having to play catchup. All the apps should gradually become available but you may encounter problems so don't worry if you can't get something to install.
