Also, can you really hold your iPhone in one hand while also using two of the fingers on the same hand as independent multitouch inputs?

I've actually done that, but it is a bit tricky. (And I'm scared as hell that I'll drop it.)
I guess different uses and different apps have different input requirements. For some things, you need to stop and slide out the keyboard/get out the stylus, whereas the real on-the-go apps need to be controllable with a single thumb.

There were times I tried to touch a link or a specific point in text and it just wouldn't do it correctly - quite frustrating - really wanted to use my finger nail or a stylus.
Pinch & zoom seems cool, but is it really better than a double tap or spiral?
The single finger kinetics demo'd on the n900 videos so far make this particular resistive screen seem like a different creature from anything previous. Hope that's the case.

But like I said, that's not going to be a deal breaker. Over-reliance on the stylus might be, though. But if new apps are designed for fingers, then I guess I'd really need to take a look at what kind of apps are already available like that.
