As the title said, if I were to have a museum, stadium or something that only would have one POI and I wanted a custom icon just for that POI, is it possible? I know it's possible for custom icons per category.

Use the label of POI instead of the category name. That will allow you to use a custom icon for a single POI.

If there's a space in the label, then yes, you need a space in the filename.

Is there a way that by clicking on a POI we can have a link to a webpage or local file....

I would like to have a file on the tablet for each POI.. click on the poi opens the file...
Could be HTML files opened in browser l.. or text files opened in Notes..

that way I could have more detailed information about the POI at hand

Same here. Just showing title+ category isn't enough. I want to have a list of restaurants I eat at with some tidbits about it in case I forget what happened last time I went.
