is there a way to password protect applications individually on N900?

There's not a general solution to this as far as I know, but I agree it might be useful.

A totally encrypted filesystem would be a nice option....enter a key at the bootloader stage just like other linux distros.

I agree, or at least some kind of truecrypt-style partial encryption, plus a basic startup password like every other phone does have.

I expect that I may well have some sensitive info, at times, on my N900. It's the nature of my work. There are plenty of perfectly satisfactory solutions to lock that info up, but a filesystem-wide encryption would render the device useless to common thieves. They could reflash it, but the data would be lost.
