In my area WiFi is not an air on the air. Only GPRS can be widely used. But it is expensive enough... Later in WM2003 I used traffic compression via toonel.net. With pictures turned on it gives about 2x medium compression. With pictures turned off - 3-4x compression. Great economy for GPRS. And web sites download more faster. I think for WiFi it can give good result too.
It uses Java program toonel - it works with JVM started from 1.3. For WM2003 there was special release of binary executable for ARM. toonel works as local proxy and much more useful than any other site-oriented compressor.
What about Java for N8x0? If it will work then I'll just use toonel.jar from my notebook on my N810.
And there is release for PersonalJava, it works on Zaurus. Any chance to get PersonalJava for Chinook?
Finally it's possible contact to toonel.net and ask them port ARM release to tablets. It already exists for Symbian (but tested on SonyEricsson P-series) - then why not port it for Maemo. If just me will contact - then they just will ignore me. But if some from Nokia people do that - then result can be positive.
