You might be able to run it in BasiliskII... It's not clear from a skim of the Wikipedia article you linked whether it's 68k or PPC; IIRC, the last 68k macs were produced in '96, and the game was released in '96, so it could be...
In any case, a port is highly unlikely, given the developers' apparent refusal to make a 4th game or multi-player mode, but you could contact them and ask.
Edit: Went to http://www.ambrosiasw.com/games/ev/ and behold, it says PPC or 68K. So it's got a decent chance at running, though I've no clue on playability.

Ah that sucks. My friend had a Mac and I rarely had a chance to play EV.
I had a PC at the time and i was too busy playing command and conquer and cannon fodder!
