mhm... just use the backup-tool in the application view (it's named "Backup"). then choose contacts (and other points as well?!) and make the backup. after that connect your phone as mass-storage to your pc and copy the file in the folder "backups" to your pc

the mass-storage functionallity should also be good with macs
if the folder "backups" doesn't show up you can open a x-terminal and type "cp -r MyDocs/backups/nameofbackup/ MyDocs/Mac\ OS/"

EDIT: better:

cp -r MyDocs/backups/ MyDocs/Mac\ OS/backups/

as you don't have to know how your backups are named (even though you could do a "ls" first or while entering a double-"tab")

I guess using backup is neat and fast and, probably the right thing to do. However, I am paranoid, if my N900 is not working or I dont have a N900 with me, and my contacts are in a backup file by N900...you get the picture. I do this to backup my contacts,

Contacts>Menu>Export>All or Selected contacts>vCard 2.1 or 3.0> Location mmc1
and then I duplicate this files onto my desktop, using SSH/winSCP here, http://talk.maemo.org/showthread.php?t=23932
This way, it is a backup that does NOT depends on anything.
