Does this happen to anyone else? Whenever a file is created on the N900 (ex. A picture is taken or a video is recorded) and mount the N900 to a PC the PC shows that the file was created 8 hours in the future. (ex: I record at 5pm today 1/23 but on my desktop it says file created 1am tomorrow 1/24). Does anyone know how to fix this? My time zone is GMT -8 so maybe the time discrepancy is related to this.

Indeed, it's because of your timezone settings. It doesn't do like that on my phone so I have no idea why it does on yours, but try to for example set your timezone to GMT+0 instead and then set manually the proper time? That should atleast fix the problem, not the cause.

I suppose I could do that. I have tons of calendar events and by changing the time zone it'll mess them all up (over 100+), I would have to modify them manually.

Edit: Yea, of course that fixed the problem but like I said now all of my calendar events are messed up

Are you sure that the timezone on the computer is set correctly, i.e. set to the same GMT -8 as the N900?
