Yes you can do this.
As far as I'm aware it does not void your warranty in anyway. Correct me if I'm wrong.

Just a quick question, I have noticed there are different firmware varients for N900 ie the global version and the uk version.
I purchased my n900 in the UK but live in NZ so I was wanting to put the global version on rather than the uk varient is it ok to do this or will it not work?
