I had the same problem. I am unable to remove MMS from the internet connections.

I edited the MMS connection and removed all information and saved it. Now it is no longer interrupting my internet usage.

I also renamed the connection from MMS to MMSold in case I ever decide to *shudder* reinstall fMMS before I reflash my phone. Perhaps something is still referencing MMS in the phone and that is why it fixed it for me.

For some reason, the delete button is greyed out. Same with my 3G connection. Apparently I can only delete WiFi connections.
