is there an app within maemo extras, testing or devel or new catalogue that allows you to create folders withing photos from the menu, so i can organize my images better?
Like older nokias and most phones.
I have friends looking through my phone to explore it as its not a common phone and when ther touch PHOTOS from the menu they can see all the phtos i have, and some are for my eyes only, if you know what i mean ;-)

Personally I put those in a folder named Private under MyDocs. This prevents them from showing up in the normal photo viewer, but able to view through file manager.

Also folders can be disabled from viewing with application Tracker Cfg (modifying file tracker.cfg).

In case you want your photos not to be shown even with standard file manager, put them in a folder which has its name starting with a dot like ".folder" . From xterminal you can still rename it to see it from file manager.
