I am considering purchasing a N810. Is it possible to play yahoo applet games or download a JAVA plug-in for the n810 that would enable me to play applet yahoo games such as yahoo Spades and Pinochle?

Java is not [yet] available for the n810.

So, you won't be able to play them unless they're flash.

Here's a list of games you can natively play on the n810: http://maemo.org/downloads/OS2008/games/

You'll be able to play most flash based games via the browser

is java available for the N800 or N770
