probably any web-based chat that doesn't use java. - i assume you don't want to join just any chat only because it works technically on your N810. you probably have chat rooms you use anyway from your desktop. try them. there's a good chance they will just work.
however, my advice is to access chat rooms via either Xchat (as suggested by lardman) or with the IRC-module of RTComm beta (which I prefer on the N800). Many "web chatrooms" are only frontends for IRC-based channels. you'll find instructions on these sites on how to access the chat with any IRC client. in my experience, IRC-clients do a much better job on the tablets than bloated web-chat.
