For the desktop, if you are using Linux, you can sync using Multi-Sync, Kitchen-Sync, etc to Evolution. You just need to get the GPE Sync plugin.

For Windows (and Linux PalmOS users) you can install Garnet VM and Hotsync the VM PIM to the Palm Desktop. You could also sync to Google then back to Outlook etc via thier plugins (using GCal as a middle man).

For Google, the best thing is Ermining

If you are going in one direction, from Google Calendar to gpe Calendar, you can just set up a Subscribe link to Google Calendar's ics page under Tools - Calendars in gpe Calendar.

Can anyone elaborate on this? I have the GPE sync plugin, and a whole slue of sync apps (the ones listed on the Ubuntu wiki) but don't have much of a clue of what to do with them...

Erminig will sync with Google Calendar. Just install it, give it your Google username and password, and sync.

I was really hoping to be able to go from gpe to evolution, I tend to make my appointments on the n800 and would like to push them to evolution.

or can Google Calendar be a stepping stone between those two (I've never used Google Calendar so I have no idea)

I've been syncing between evolution and gpe more-or-less as described in Ryan's guide (that's a little out of date now) with reasonable success. Two things I've noticed though:
1) Birthdays are not synced, meaning that the date is left blank on the target. It's quite easy to lose them if you update details on the "wrong" device, or if you get conflicts and resolve the "wrong" way.
2) gpe can cope with contacts with just a company name, but evolution cannot. It all goes quite pear-shaped if you try to sync this kind of contact.

Also, you have to use an opensync 0.2x release, because the evolution plugin doesn't work for 0.3x yet. Hopefully the next release of 0.3x will have it?
