In FAM if I go to uninstall apps, enable All Packages and then search for "language files", I get almost 1000 hits. At least 900 of them are for languages I don't use. Is it safe to uninstall those?

I would suppose so. The worst thing which can occur is mp-fremantle-generic-pr getting uninstalled. Because it depends on all these languages. And then you wouldn't be able to get updates for Maemo until you install mp-fremantle-generic-pr.

It should be possible to create a modified mp-fremantle-generic-pr package which depends on only one locale, so that you would have only the locale you need, and no others.

Thanks, is that package you mention just a metapackage?

Yes, mp-fremantle-generic-pr is just a meta-package.

And be careful not to uninstall the locale you actually use.
