As far as I know, you can't. With the very limited details (and number) that can be held on a SIM card, I gave up bothering about this a long time ago.

If you have an sd memory card in the phone you can export all your contacts to the memory card.
When you flash the eMMc it only wipes the data from your phone's internal memory so the data on your memory card is all saved. You can restore from the memory card.

I haven't looked, so forgive my laziness. Can contacts be imported from a SIM card into the N900?

Yes. If you run Contacts and tap on the title bar, then select "Get contacts" from the menu, you can choose to copy them over from the SIM card.
