When I use dpkg-query I see that Posix-locale takes a very big portion of memory.

I did some search and I see that Posix-locale is Slovak locales for Fremantle.

Can I apt-get remove posix-locale safely or will I get a problem?

I have the global firmware and I'm currently running English Netherlands language (there is no other english language on it)

You are wrong, posix-locale package you have installed on device is not only "Slovak locales" That package include regional settings for all supported countries (that's the reason it's little bit bigger).

There was/is additional package called "Slovak Posix Locale" in extras-devel repository, because Slovak regional setting was not officialy supported in very first FW's.
