After countless hours of dealing with Sprint, searches on the Internet, help from some really nice people here, and LOTS of try-try again, I'm finally able to use my phone as a modem again.
Long story short- there was something wrong on Sprint's end, not mine.
I thought I'd post this, in case anyone else is having problems hooking up.
If you're able to connect your N800 to phone via bluetooth and can share files between the two; have used the wizard on the N800 to set up your data access; have entered your Sprint PCS UID (username@sprintpcs.com) and Password; and it's still not connecting- I suggest you call sprint and stay on their case.

It's a great day. I have my PAM back and can once again surf while riding the train to and from work.
