Is there anyway to OC my n900 with stock kernel?. If so how?

nope.
install kernel power.
And if you do so, READ the instructions! those are very very important!

Well, my skype and sip calls are kinda more choppy in kernel-power. So i wanted to go back to stock.

Was on Power before at 800, 900 and even 1150 rock solid. But had to go back because of skype and sip choppy issue

Well, can i run skype on stock while the phone is OCed on power @ the same time ?
