Do I need to find only Maemo software to use on the 810 or will any Linux software work? I looked for a calendar and saw Mozilla has one, but not sure if I can use any old Linux program or whether it needs to be coded for the 810 specifically.

Most Linux software still needs to be "ported" (converted) by someone to work on Maemo. At the very least there needs to be a version that is compiled to work on ARM processors (as opposed to x86).
