I think you mean that you have placed a checkmark in the box at Menu > Accounts > Manage > Edit > Advanced > Leave messages on server. This setting prevents the messages from being deleted automatically after retrieval, but it does not preserve them if you manually delete them on the N810.
When you delete a Message deletion dialog appears with two choices:
Delete from Nokia N810 only
Delete from Nokia N810 and server
Unfortunately, the first choice is unavailable unless you have retrieved the body of the message to the N810. This is an odd design because often I can see from the header that the message is one I do not need to read now, but will need to read when I return to my office PC.
