Does anyone have any experience with the Maemo Recorder app for the N810? Does it record to MP3? If not, is there a format converted than can convert to MP3 from whatever format the Maemo Recorder produces?

As far as I could tell from its homepage, it just records to the WAV format. However, you can install it from maemo.org/downloads if you want to make sure for yourself.

I couldn't find a tablet-based converter anywhere on maemo.org, presumably there is one somewhere but I'm not sure where.

I've tried it but the volume was poor.

Well then, it looks like I'll just keep recording with my R-09 and then transfer the MP3s to the N810 via memory card.

You can record in the highly compressed .ilbc (default) and then use audacity to convert to a .mp3:

it records in only 8kHz anyway, the best of the three formats is still so close to useless for anything but simple voice memos that it's hardly worth using. It's not a fault of maemo recorder, apparently the hardware can't do any better.
