What is the software stack used for the email client? So far I only know the "modest" project is involved but I'm unsure in what manner.

Is the modest project only the GUI? Is the actually email protocols, such as IMAP, implemented in another library?

My goal is to set up my scratchbox environment with everything required to build the opensource components of the email client. Preferably the GUI and the IMAP implementation. Any advice?

Modest is the GUI - it uses tinymail for the core protocol implementations.

It's perfectly doable :-) If you like living on the bleeding edge (and since both modest and tinymail are developed openly) you can even build directly from git/svn, see http://modest.garage.maemo.org/ under "Development".
