This one is also on top of my wish list!
What you can do to have a 125% zoom factor at startup is to edit your ~/.opera/opera.ini and change the value for Scale from 100 to 125. Unfortunately this level can't be reached again after pressing the zoom key. Than you have 100% or 150% again.

I'd rather have a 125 in there than an 80 . . .
