is there an application that will let me create a note and display it on the desktop, like stickynotes in windows?

Yep, check out simplenotewidget

Does exactly what you're asking.

Personally I wanted to be able to create notes in my own handwriting rather than just plain text that the current widgets allow, so I used a different approach.
I decided on a background image for the desktop that I wanted to put the stickynote on, and attached a picture of a blank sticky note onto the background image. Now all I have to do is open up the background image in mypaint, write/draw whatever I want on it and then set this new modified picture as my background image.
Hope that makes sense.
Here's the background image to hopefully make what i'm saying clearer

I don't think I can fit that tree plus note on my N900!

If you want your own handwriting on a note, check out Xournal as one possibility.

Or you could just make really, really tiny stickies and place them on the screen.

But wouldn't that affect the touch screen responsiveness? Lol.
I know it was a strange approach, but it was the first idea that came to my mind so I went with it
