I had a N800 for ~3 weeks, it got broken, amazon.de repaid the money, now I am waiting for the N810, but:
1. 2GB of internal storage is great. No issues with OS-cloning, etc.
2. I own a Palm TX with TomTom for car-navigation
==> I do not need Wayfinder!

My question is: Is it possible and not too complicated to remove Wayfinder from the N810? Even in a way that it remains re-installable?

It's usual application and may be delete if you need for space on rootfs.

Seriously. I would probably opt to put the maps on an external 2MB card, that I could insert when I need the map/voice functionality, as I'll likely only use this option once and a while.

As of now, I believe the maps MUST be on the internal memory card. You might say that's just silly and you'd be right. Such is the way of things. It may change.

That's too bad, but not worth passing over (IMO). If this is the case, then the 2GB internal storage spec is a bit misleading.
