it seemed totally fine for the hour or two i ran it!

sooooo, if its only using standard voltage is that not a fairly "safe" clock?

Overclocking is nice for testing the potential of the device but I'm more interested in extending battery life.

No. if Letho's kernel uses OPP5 for 1GHz it's overvoltage and not safe at all:

that doesn't really answer the above.

but the 1000mhz at stock voltage will still be "better" to run than the 800 with an overvoltage. wouldn't it?

yep. 600Mhz with the stock kernel is not good for your device,
even though Nokia locks it at 600 at the beginning of phone calls.
1GHz with the same voltage is much worse.

But who is experiencing instability?
Perhaps ulv-lv kernels are still instable (Lehto, Titan and Matan are working soooo slow, not like Nokia guys with light-speed solution to our bugs...)
When you find the max speed for n900, the issues are the pr1.1.1 ones! no more, and with Titan one, yes, less!
Corruption of storage media-system? For sure, I reflashed mine two times... in January, so thanks Nokia, I lost all my data-contacts-work with YOUR firm and with YOUR clock settings.
And yes, I know, you know, they know we are killing n900 lifetime.
If they don't want to say WHAT ISSUES THEY FOUND WHEN TESTING PRE-RELEASE N900, then, please, don't say nothing.
The "Three Magnificent Team" aware us of all the risks lots of times.
Don't stop working on pr1.2 only to tell us nothing.
