What I'd love to know is whether Nikon DSLRs, esp. the D40, can be controlled remotely not just to open/close shutter, but also to set exposure, zoom, focus, etc.

Not possible with the remote. I've read some conflicting information about it when connected through a cable, and never had a chance to try it.
I built myself a small interface for it, to add a timer and repeater, that makes it a lot more useful to me. Not sure how interested the author would be in that, or if I should just make my own package, once it's polished a bit more.
