Seems you already did this, and you know more about theming than me anyway.
Maybe do the gconf before it deletes the folder?
gconftool -s --type string /meegotouch/theme/CurrentMeegoTheme blanco
gconftool -s --type string /meegotouch/theme/name blanco
You can request someone with a PR1.1 device to give you the gconf values using GConfik...
OR ask Vesuri if pr1.1 has different behavior
OR when you submit to Store QA make it expressly clear that this works for PR1.2 and above only...I know a number of apps doing the same thing...

I have this problem when i uninstall the theme if i don't swtich to blanco before. But i don't understand why PR1.1 don't switch to blanco, maybe the default theme on pr1.1 have a different name and not blanco?
ISSUE: SUMMARY: The application prevent the user from using the device after un-installed.
STEPS TO REPRODUCE:
1. Download and install the content.
2. Click the icon of the application.
3. Un-install the application.
4. Re-start the device.
5. Observe the icons of the application.
ACTUAL RESULT: The icons in the application grid is not displayed properly, they are displayed as red block.
EXPECTED RESULT: The application must not prevent the user from using the device.
AFFECTED DEVICES: N9 Firmware: v 20.2011.40-4_PR_001.
FREQUENCY REPRODUCED: 100%.
