If I was certain that 16gb was all the memory I would ever need (with no need to remove it), what are the performance advantages/disadvantages (if any) to 1 16gb card versus 2 8gb cards.

a smaller FS is easier to journal and quicker to access, though the difference between 8 and 16 GB in this day and age is not really noticeable to an end user.

I can remove the external slot card to transfer large media files from my PC using it's built-in SD card slot faster than via a USB or WiFi connection. You would almost have to use the internal slot with one card to get use of a swap file (or use the 128MB microMMC card Nokia shipped with at least the N800 I bought recently).

At current prices, a single 16 GB costs considerably more than two 8GB cards (what I am using).

The main advantage is that if you have one 16-gig card and it is corrupted, you lose the cost of the 16-gig card. If you have two 8-gig cards and one is corrupted, you lose the cost of an 8-gig card.
