It's called IDEA. Don't have a link handy, but searching the forums should find it.

I have IDEA, But I can't seem to pick and choose the desktop icons that I want. It only gives me the standard ones that comes with it. Any tips on how to change them?

You can scp or ssh to the N800 and browse to the folder /usr/share/pixmaps and download the icons you want from there and upload them to a folder accesible by the icon chooser in IDEA.... or you can make your own like I do

that would require to install a ssh server correct?

it added an icon in your controlpanel. if you find it too hard to use, try simplelauncher:it's a tiny bit buggy but not too bad
