oh well, one thing that is really missing here and i am sure you'd definitelly love it too is BIGGER display..at last 4" but I'd not be angry to have screen as big as the whole front. :-)
as for apps..well maybe a simple view/edit app for Office documents. I'm using Abiword but...you know
And I also miss a widget like timetable that adjust for each day (as i work as a teacher)
or widget for calendar that shows tasks and dissapear after task is completed. I don't like messed desk :-)

how about a webcam app that is compatible with iphone and android phones..there's an app called Tango...if the N900 could get that..that would be awesome!

I would recommend you to get zim for that, xournal might do it as well. I merely write diaries, although if there's are something important I just create a calendar event.

Zim is unbelievably useful application, at first I thought I would never use it but once I started using it its addictive. It may have more functions than what you need but I am sure not less than that. Try it its a desktop wiki application, you can write date based articles/diary as well as categorized articles.

Doesn't android support XMPP/Google Talk video calls? And I think I read somewhere that iphone got skype support sometime ago.

Am missing a cross-platform LAN based chatting and file sharing utitlity i.e. IPMessenger clone.
