I was too looking for ways to route VOIP traffic through VPN. Then I came across this bug (https://bugs.maemo.org/show_bug.cgi?id=1860). I tried the solutions mentioned there but with no success.
PS: I am not sure whether this bug applies to every application or just VOIP.
