I know theres a nokia app on the store now for panorama on the N9 but the simplified method of just panning the phone around beats trying to line up images and take additional pictures.

I agree on this one, especially given that there seemed to be some development demonstrated in 2010 on an N900...

Touch friendly remote desktop application. I think there was an rdesktop app for N900 but I don't think this is available in the Nokia store, and it wasn't particularly optimised for touch.

Furthermore:
Korg iElectribe, Yamaha Tenori-On (TNR-i), Native Instruments iMaschine, etc.
'Mainstream' music production 'toys'. Touch friendly, entertaining for short periods of time.

I realise the RDP and music production apps are unlikely. However, Shazam should be possible.
