Nokia publish his map service at: http://europe.nokia.com/A4509271

But, compatible devices of "Nokia Maps" don't include N800/N810.

How can we use "Nokia Maps" in our N800/N810?

Pretty sure that's for the symbian mobile phones. You have to use the mapping program on the nokia, also pretty sure they use the same maps.

No way to let other applications, such as maemo-mapper, to use these maps from nokia?

Nope. Once again, these are proprietary vector maps.
