A note taking/post it applet or like a to do list applet? It would be cool to have these on the desktop. Also, can anyone recommend to me one of the better calender applications. Google calender synching would be awesome.

GPE Calendar and Erminig (for G-Calendar synching) work pretty well for me. Some other had recently some issue with Erminig though. I am only synching the Calendar, not the Todos or Contacts, which Erminig does not support. In all it is not perfect but I am sure improvements are on their way.

GPE Calendar, GPE Summary and Erminig are what you're looking for. Both GPE applications can be installed without problems, and Erminig can be a little troublesome but nothing that can't be solved easily.

Not sure about the note-taking applet, though. I use Maemopad, but maybe Quicknote or some of the lighter apps can be of some use to you. Haven't seen one that has the option of a Desktop applet.

Is there something like Sketch but an applet instead? I'd like to just scribble a note on my tablet without having to open anything sometimes.

You have to open it, but Memopad+ (or Xournal) are receptive to scribbling.

Alternately, you could carry a Magic Slate (remember those?).
