For me, there's 4 differences:
1) With the iPhone, I would have a single device with persistent wireless data. With the N810, I don't. I have to, at best, have 2 devices, one for voice/txt and PIM data, and then tether my N810 to it for all other data. IMO: the current situation is an EPIC FAIL for the NIT.
2) With the iPhone, I would have the basic productivity and connectivity apps I want/need bundled with the device (PIM, VPN, syncing, etc.). With the N810, I don't.
3) With the N810, I have a usable keyboard that doesn't obscure/steal screen real estate in order to use it. The iPhone doesn't. The iPhone goes one step further in its failing here in that it doesn't even let you use an external keyboard via bluetooth nor USB.
4) With the N810, I have a healthy application ecosystem right now (ssh client, vnc client, Pidgin, etc.). With the iPhone, that may come soon, but it's not there now.
The N810 could fix its problems by making another "WWAN edition" device that parallels the WiMAX edition. "N810 Mobile Edition" or something, with GRPS, EDGE, UMTS, HSPA support for SMS/MMS and Data. Voice would be cool, but it's not necessary.
Ultimately, I will probably leave the NIT platform over #1 and/or #2. Not because I think the NIT platform sucks, but because soon someone else will most likely offer something that gives me what the NIT gives me now, plus those two things ... and do so before the NIT solves those issues. It might be android. It might be openmoko. It might be one of the Ubuntu based MIDs. (though, I'm pretty sure it WONT be the iPhone, because I don't expect they will EVER fix #3)
Hell, it might be the E66 or E71 (depends on whether or not I can get the S60 ssh client to work nicely with the S60 vnc client I recently came across; whether or not I like the smaller screen for the E71, and/or whether or not I can find a thumb sized bluetooth keyboard that I like enough to use with the E66 ... and if the E66 can be used in landscape orientation). It would be BETTER if I could run a fully supported maemo (or some other form of unix/linux) on them (and/or an T-Mobile-USA 3G version of the E90), but they might be "good enough" on their own.

I don't need or want 'persistant' wireless. I don't currently, nor do I want to in the future, carry a device as large as an iPhone or an IT as a phone - nor do I want a 2 year phone contract to boot.
Just as I am sure the iPhone input method appeals to others.

We had a mini heat wave but suddenly we're back to a lovely 15-25C. The soccer is good, the hockey on the other hand....
Not a chance. I don't come here to think about the cult of Apple. But I am keeping my eye on the apple trees.
Can we talk about NITs on the ITT forums instead? Not to nitPick but the iCult is tiresome and off topic.

These devices aren't comparable but we can compare the companies' support for each of the items. I think that Apple puts alot more behind the iphone than Nokia does behind the tablets. I mean the tablets development community is US!!

I have recommended tthe iTouch to people as much as I have the tablet - depends on the person and their wants/needs.
