Ummm... I'm gonna have to see authority on that, ragnar-- because my own experience as a former product designer was just the opposite: you identify a market SEGMENT, pull your study candidates from that select pool and target them.
I guarantee you that while Apple may have tested against a very large sample with the iPhone, they had specific demographics in mind.

Well, dpad is pretty much necessary for most dynamic games, and most Nokia phones have dpads. So, by removing dpad you close off whole bunch of use cases at the advantage of not having 4 stupid little buttons. It is not like not having a joystick in your car, but more akin to not having a steering wheel.

Oh my god, he wipped out the joystick analogy again. Okay, a few questions, why doesn't Apple have a hardware keyboard? Are 30+ million people wrong or didn't they do their marketing research or both? Or are they in a market that doesn't matter to Nokia?

On that footing it can be equally argued that it is simply an indication of the reluctance of individuals to accept change.
Neither argument has much credibility because they are founded on unvalidated propositions. Unless we conduct research into these assertions, their validity will remain a mystery.
